I haven't been cooking lately. A combination of working days and days without a day off, half marathon training, traveling for football games and a husband who now travels A LOT for work means I've become a totally lazy cook.
Last week while D$ was out of town, I ate chips and drank wine for dinner. Every night.
But yesterday I caught the cooking bug and wanted to make something healthy, easy and new. I visited one of my favorite food blogs: The Culinary Couple and they had just posted about the dish that would fit the bill. Fettuccine with Squash, Arugula and Pine Nuts.
What I loved most about this dish (and this is very NOT the way I cook) but I didn't need to measure anything. I eyeballed how much balsamic and olive oil to use, I just chopped up some fresh sage and dumped in pine nuts to my liking. I didn't take any pictures while cooking- because I was talking on the phone- seriously, it is THAT easy. And despite my break from cooking I had almost all the ingredients in my kitchen ready for use.
D$ loved it, and even though I am fearful of serving him meatless meals, he said he doesn't mind and really like the dish.
I think this dish (and the endless variations that come to mind) will be on the winter dinner rotation for a while!
